Pork & Coriander Meatballs With Tomato Sauce
|Lean minced pork||1 Pound (500 Gram)|
|Onion||1 , finely chopped|
|Garlic||1 Clove (5 gm), crushed|
|Chili pepper flakes||1 Teaspoon|
|Sun dried tomato puree||3 Tablespoon|
|Chopped fresh coriander||4 Tablespoon|
|Onion||1 , chopped|
|Canned chopped tomatoes||1 3⁄4 Pound (875 Grams)|
|Vegetable stock||1⁄4 Pint (150 Milliliter)|
|Sun dried tomatoes in oil||4 Ounce (125 Gram)|
Mix together all the ingredients for the meatballs and form into 12 balls.
Place on a baking sheet.
Put the meatballs under a preheated hot grill and cook them for 6-7 minutes, turning once or twice, until golden and cooked through.
Meanwhile, put all the ingredients for the sauce into a saucepan, bring to the boil, reduce the heat, and simmer for 10 minutes.
Put half the sauce in a food processor or blender and process until smooth.
Return to the pan with the remaining sauce, mix together, and heat through.
