Plum Sauce

Ingredients
  Plums 4 Pound
  Cider vinegar 1 Cup (16 tbs)
  Brown sugar 2 Cup (32 tbs)
  White sugar 1 Cup (16 tbs)
  Fresh ginger 1 Inch, minced
  Salt 1 Tablespoon
  Mustard seed 2 Tablespoon
  Canned chopped green chili peppers 2 Tablespoon
  Chopped onion 3⁄4 Cup (12 tbs)
  Garlic 1 Clove (5 gm), minced
Directions

Pit and chop plums.
Combine vinegar, sugars and seasonings.
Bring to a boil; reduce heat; and add chopped plums.
Cook until thick and syrupy, about 1 1/2 hours.
Pour hot into hot jars, leaving 1/4 inch head space.
Adjust caps.
Process 20 minutes in boiling water bath.
