Mini Loaves With Beer Cheese Sauce
|Water||2⁄3 Cup (10.67 tbs)|
|Savory rice mix||1⁄3 Cup (5.33 tbs)|
|Condensed cheddar cheese soup||11 Ounce (1 Can)|
|Ground beef||1 Pound|
|Beer/Apple juice||1⁄3 Cup (5.33 tbs)|
|Shredded zucchini||3 Cup (48 tbs)|
In a small saucepan stir together water and rice mix.
Bring to boiling.
Reduce the heat, then simmer, covered, for 15 minutes; do not lift the cover.
Remove from the heat.
Let stand, covered, for 10 minutes.
Fluff rice with a fork.
In a bowl combine egg and 1/4 cup of the soup.
Stir in rice.
Add beef; mix well Shape into 6 loaves.
Place in an 8x8x2-inch baking pan.
Bake in a 350° oven for 30 to 35 minutes or till done.
Meanwhile, make the sauce.
In a saucepan combine the remaining soup and beer or apple juice.
Cook and stir till smooth and heated through.
Steam zucchini for 2 to 3 minutes or till tender Place zucchini on a serving platter; arrange the meat loaves atop.
Spoon sauce over meat.
Garnish with cherry tomatoes, if desired.
