Prawns In Chilli Sauce

  Peanut oil 4 Tablespoon
  Shelled shrimp 1 Pound
  Garlic 1 Clove (5 gm), crushed
  Green ginger 1 1⁄2 Inch, peeled and chopped (Fresh)
  Red chili 2 , chopped
  Green pepper 1 , pith and seeds removed and cut into strips
  Chinese chilli sauce 1 Tablespoon
  Tomato paste 1 Tablespoon
  Scallions 2 , chopped
  Salt To Taste
  Pepper To Taste

Heat the oil in a large, deep frying-pan.
When it is hot, add the prawns (shrimp) and stir-fry for 5 minutes, or until they are cooked.
Using a slotted spoon, transfer the prawns (shrimp) to a plate.
Keep hot.
Add the garlic, ginger, chillis and pepper to the pan and stir-fry for 3 minutes.
Stir in the chilli sauce, tomato puree (paste) and seasoning to taste and stir-fry for a further 2 minutes.
Return the prawns (shrimp) to the pan and stir-fry for 1 minute, or until they are well blended with the sauce.
Transfer to a warmed serving bowl and sprinkle over the spring onions
