Prawns In Chilli Sauce
|Peanut oil||4 Tablespoon|
|Shelled shrimp||1 Pound|
|Garlic||1 Clove (5 gm), crushed|
|Green ginger||1 1⁄2 Inch, peeled and chopped (Fresh)|
|Red chili||2 , chopped|
|Green pepper||1 , pith and seeds removed and cut into strips|
|Chinese chilli sauce||1 Tablespoon|
|Tomato paste||1 Tablespoon|
|Scallions||2 , chopped|
Heat the oil in a large, deep frying-pan.
When it is hot, add the prawns (shrimp) and stir-fry for 5 minutes, or until they are cooked.
Using a slotted spoon, transfer the prawns (shrimp) to a plate.
Add the garlic, ginger, chillis and pepper to the pan and stir-fry for 3 minutes.
Stir in the chilli sauce, tomato puree (paste) and seasoning to taste and stir-fry for a further 2 minutes.
Return the prawns (shrimp) to the pan and stir-fry for 1 minute, or until they are well blended with the sauce.
Transfer to a warmed serving bowl and sprinkle over the spring onions
