Wine Poached Peaches With Blackberry Sauce
|Riesling/Other dry white wine||1 Cup (16 tbs)|
|Unsweetened orange juice||1 Cup (16 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Fresh peaches||1 3⁄4 Pound, peeled and halved (4 Large Ones)|
|Blackberry sauce||1⁄4 Cup (4 tbs)|
Combine first 3 ingredients in a large nonstick skillet.
Bring to a boil; reduce heat, and simmer 5 minutes.
Arrange peaches in skillet; cover, reduce heat, and simmer 10 minutes or until peaches are tender.
Remove from heat; cool slightly.
Cover and chill thoroughly.
Remove peaches from liquid, using a slotted spoon; discard liquid.
Place peaches, cut side down, on a flat cutting surface.
Cut lengthwise slits in peaches to within 1/2 inch of one end, forming a fan.
Spoon 2 tablespoons Blackberry Sauce onto each dessert plate.
Place fanned peaches over sauce.
Garnish with mint sprigs, if desired.
