Peel the onion and stud with the cloves.
Place the milk in a saucepan with the onion.
Bring to the boil and simmer gently for 10 minutes.
Remove the crusts and make the bread into breadcrumbs, using the double-bladed chopping knife.
Remove the onion from the milk, stir in the breadcrumbs and infuse for 30 minutes.
Add the butter and reheat, stirring all the time.
Season to taste.
