Sauce Alla Siciliana
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Olive oil||2 Tablespoon|
|Tomatoes||3 , peeled and chopped|
|Sliced pitted ripe olives||1⁄2 Cup (8 tbs)|
|Drained capers||2 Tablespoon|
|Dried basil||1⁄2 Teaspoon, crushed|
|Dried oregano||1⁄4 Teaspoon, crushed|
In skillet cook green pepper, onion, and garlic in olive oil till vegetables are tender.
Stir in chopped tomatoes, olives, capers, basil, oregano, 1/4 teaspoon salt, and dash pepper.
Boil gently, uncovered, for 3 to 5 minutes or till sauce is slightly thickened, stirring occasionally.
