Hollandaise Sauce

Ingredients
  Eggs 3 Small
  Butter 2 Tablespoon
  Lemon juice 1
  Salt and pepper 1
Directions

1. Beat the egg yolks, salt, pepper and lemon juice till light and fluffy.
2. Hold the vessel over a pan of boiling water and heat till the mixture begins to thicken.
3. Gradually add butter and continue to heat.
4. Cool and refrigerate. Can be used as an accompaniment for roast meat and chicken or fish fingers.
