Grouper Sandwich With Horseradish Sauce

Ingredients
For onion marinade
  Peanut oil 1 Tablespoon
  Onion 1 Medium, minced
  Beer 1⁄2 Cup (8 tbs)
  Cider vinegar 3 Tablespoon
  Dry mustard 1⁄2 Teaspoon
  Ground pepper 1⁄4 Teaspoon
  Ground cumin 1⁄4 Teaspoon
  Grouper fillet 24 Ounce (4 Pieces, About 6 Ounce Each)
For horseradish sauce
  White horseradish 2 Tablespoon
  Low fat plain yogurt 1 Cup (16 tbs)
  Peanut oil 2 Tablespoon
  Burger buns 4 , sliced (Rolls)
  Lettuce leaves 4
  Tomato slices 4 Large
Directions

To prepare marinade, heat oil in saucepan.
Saute onion for 4 minutes over medium heat, stirring occasionally.
Stir in remaining ingredients.
Cool marinade.
Pour marinade into resealable plastic bag.
Add grouper and seal bag securely.
Turn bag several times, so fish is completely coated by marinade.
Refrigerate and marinate for 2 hours, turning several times.
Remove fish from bag and discard marinade.
Mix horseradish with yogurt and put it in a bowl.
Preheat stovetop grill.
Brush grill surface lightly with peanut oil and grill grouper fillets over medium-high heat, about 2 minutes on each side or until fish is done to taste.
Fish will flake easily when done.
Warm rolls, cut side down, on grill.
Set a roll on each plate.
Place a lettuce leaf on the open roll.
Remove grouper and set on lettuce.
Top with tomato.
Pass horseradish sauce at table.
Good with chopped pickles.
