Game Hens With Flaming Cherry Sauce
|Rock cornish game hen||2 Pound (Two 1 Pound Hens)|
|Butter/Margarine||2 Tablespoon, melted|
|Ground ginger||1⁄4 Teaspoon|
|Cherry sauce||2 Tablespoon (As Needed)|
Rinse hens and pat dry.
Sprinkle cavities with salt and pepper.
Place hens, breast side up, on a rack in a roasting pan.
In a small pan, combine butter with ginger, paprika, and the 1/4 teaspoon salt; brush over hens.
Bake, uncovered, in a 375° oven for 45 to 60 minutes or until leg joint moves easily; during last half-hour, baste occasionally with pan drippings.
Meanwhile, prepare cherry sauce.
When hens are roasted, skim and discard fat from pan juices and stir juices into sauce.
Arrange hens on individual plates and garnish with orange slices.
Spoon cherry sauce over hens.
If desired, warm brandy in a small pan; set aflame (not beneath an exhaust fan or flammable items) and pour over birds.
