Chunky Peanut Sauce

Ingredients
  Peanut oil 2 Tablespoon
  Green onions 3 , minced
  Garlic 2 Clove (10 gm), minced
  Hot pepper flakes 1⁄8 Teaspoon (Or To Taste)
  Strong chicken stock 1 3⁄4 Cup (28 tbs)
  Chopped peanuts 3⁄4 Cup (12 tbs)
  Lime juice 1 Tablespoon, freshly squeezed
  Dark brown sugar 2 Tablespoon
  Minced cilantro 2 Tablespoon (Or To Taste)
Directions

To prepare chunky peanut sauce, heat oil in saucepan.
Saute onions, garlic, and hot-pepper flakes for 2 minutes, stirring often.
Mix in stock, peanuts, lime juice, sugar, and cilantro.
Simmer for 5 to 6 minutes, stirring often.
If sauce cools and thickens, add hot water, 2 tablespoons at a time, until mixture reaches desired thickness.
