Chunky Peanut Sauce
|Peanut oil||2 Tablespoon|
|Green onions||3 , minced|
|Garlic||2 Clove (10 gm), minced|
|Hot pepper flakes||1⁄8 Teaspoon (Or To Taste)|
|Strong chicken stock||1 3⁄4 Cup (28 tbs)|
|Chopped peanuts||3⁄4 Cup (12 tbs)|
|Lime juice||1 Tablespoon, freshly squeezed|
|Dark brown sugar||2 Tablespoon|
|Minced cilantro||2 Tablespoon (Or To Taste)|
To prepare chunky peanut sauce, heat oil in saucepan.
Saute onions, garlic, and hot-pepper flakes for 2 minutes, stirring often.
Mix in stock, peanuts, lime juice, sugar, and cilantro.
Simmer for 5 to 6 minutes, stirring often.
If sauce cools and thickens, add hot water, 2 tablespoons at a time, until mixture reaches desired thickness.
