Scallops In Tomato Sauce
|Scallops||12 Large, washed|
|Condensed beef broth||1 Can (10 oz) (284 Milliliter)|
|Garlic||1 Clove (5 gm)|
|Tomato juice||125 Milliliter|
|Crackers||4 , crumbled|
Poach scallops in broth for 5 minutes.
Place in individual scallop shells or small baking dishes which have been rubbed with garlic.
Cover each with 30 mL (2 tablespoons) tomato juice.
Bake in 200°C (400°F) oven for 10 minutes.
Sprinkle with cracker crumbs; garnish with lemon slices; serve.
