Zippy Tomato Sauce
|Tomatoes||6 Medium, peeled and quartered|
|Vegetable oil||1 1⁄2 Tablespoon|
|Hot pepper||1 , seeded and chopped (Long)|
|Onion||1 Large, finely chopped|
|Garlic||1 Clove (5 gm), finely chopped|
|Green pepper||1 Small, seeded and chopped|
|Freshly ground black pepper||1⁄3 Teaspoon|
|Dried basil||1⁄2 Teaspoon|
|Dried oregano||1⁄2 Teaspoon|
|Chopped parsley||2 Tablespoon|
1. Chop the tomatoes coarsely. Heat the oil in a large kettle and saute the hot pepper and onion until the onion is tender but not browned. Add the garlic and pepper and cook for 3 minutes.
2. Add the tomatoes, salt, pepper, basil, oregano, and parsley. Bring to a boil and cook, stirring occasionally, for 30 minutes.
