Tomato Herb Sauce

Ingredients
  Non stick olive oil cooking spray 1
  Chopped onion 1 1⁄2 Cup (24 tbs) (About 2 Medium)
  Garlic 4 Clove (20 gm), minced
  Dried basil leaves 1 Tablespoon
  Dried oregano leaves 1 Teaspoon
  Dried tarragon leaves 1⁄2 Teaspoon
  Dried thyme leaves 1⁄4 Teaspoon
  Ripe tomatoes 2 1⁄2 Pound, peeled, cut into wedges
  Ground chicken 1 Pound, cooked, crumbled and drained
  Water 3⁄4 Cup (12 tbs)
  No salt added tomato paste 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
Directions

Spray large nonstick skillet with cooking spray; heat over medium heat until hot.
Add onions, garlic, basil, oregano, tarragon and thyme; cook and stir about 5 minutes or until onions are tender.
Add tomatoes, chicken, water and tomato paste; heat to a boil.
Reduce heat to low and simmer, uncovered, about 20 minutes or until sauce is reduced to 5 cups.
Stir in salt and pepper.
