Tomato Herb Sauce
|Non stick olive oil cooking spray||1|
|Chopped onion||1 1⁄2 Cup (24 tbs) (About 2 Medium)|
|Garlic||4 Clove (20 gm), minced|
|Dried basil leaves||1 Tablespoon|
|Dried oregano leaves||1 Teaspoon|
|Dried tarragon leaves||1⁄2 Teaspoon|
|Dried thyme leaves||1⁄4 Teaspoon|
|Ripe tomatoes||2 1⁄2 Pound, peeled, cut into wedges|
|Ground chicken||1 Pound, cooked, crumbled and drained|
|Water||3⁄4 Cup (12 tbs)|
|No salt added tomato paste||1⁄4 Cup (4 tbs)|
Spray large nonstick skillet with cooking spray; heat over medium heat until hot.
Add onions, garlic, basil, oregano, tarragon and thyme; cook and stir about 5 minutes or until onions are tender.
Add tomatoes, chicken, water and tomato paste; heat to a boil.
Reduce heat to low and simmer, uncovered, about 20 minutes or until sauce is reduced to 5 cups.
Stir in salt and pepper.
