Apricot Sauce Sweets
|Snipped dried apricots||1 Cup (16 tbs)|
|Orange juice||3⁄4 Cup (12 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Brown sugar||3 Tablespoon|
|Sweet potatoes||2 1⁄2 Pound, cooked, peeled, and cut crosswise into thick pieces|
|Walnut halves||1⁄2 Cup (8 tbs)|
In saucepan combine apricots, orange juice, water, brown sugar, and honey.
Bring to boiling.
Reduce heat; cover and simmer till apricots are tender, 20 to 25 minutes.
Remove from heat and stir in butter.
Arrange sweet potatoes in a 12-inch skillet; sprinkle with walnuts.
Pour apricot sauce over.
Cover and simmer till potatoes are heated through and glazed, about 15 minutes.
