Mushroom Sauce For Meatloaf
|Vegetable oil||2 Tablespoon|
|Mushrooms||1⁄2 Pound, sliced|
|Onion||2 Tablespoon, chopped|
|Eggplant||1 Cup (16 tbs), peeled|
|Beef stock||2 Cup (32 tbs), heated|
|Chives||1 Tablespoon, chopped|
|Cold water||4 Tablespoon|
|Salt and pepper||1|
Heat oil in frying pan.
Add mushrooms, onion and eggplant; cover and cook 10 minutes over low heat.
Add beef stock, chives and season well; bring to boil.
Mix cornstarch with water; stir into sauce and cook 4 to 5 minutes over low heat.
