Light Caper Sauce
|Lamb broth||1 1⁄2 Cup (24 tbs)|
|Light cream||1 Cup (16 tbs)|
|Capers||1⁄2 Cup (8 tbs), drained|
Melt butter and stir in flour.
Add lamb broth slowly, stirring constantly.
Cook and stir until reduced to 1 cup.
Add cream and simmer., stirring for 5 minutes.
Season to taste with salt and freshly ground black pepper.
