Chinese Spicy Beef In Orange Sauce

  Beef steak 1 , thinly sliced
  Egg white 1
  Black pepper powder To Taste (For Seasoning)
  Salt To Taste (For Seasoning)
  Cornstarch 1 Tablespoon
  Flour 1 Tablespoon
  Schezwan peppercorn 1⁄4 Teaspoon, dry roasted and ground
  Ground cumin 1⁄4 Teaspoon
  Schezwan hot peppers 1⁄4 Teaspoon
  Oil 1⁄4 Cup (4 tbs) (Adjust Quantity As Needed For Frying)
  Oil 1 Tablespoon
  Pak choi 2
  Mushrooms 8 , sliced
  Onion 1⁄2 Medium, sliced
  Salt 1 Pinch
  Schezwan pepper 1 Pinch
  Orange marmalade 2 Tablespoon
  Fresh chilly stuff 1 Tablespoon
  Soy sauce 1 Tablespoon
  Vinegar 1 Tablespoon

In a bowl, place the sliced beef, add the egg white, black pepper powder, salt, cornstarch, schezwan pepper, cumin and hot schezwan pepper; mix well and keep aside.
In a small dish mix the flour, cornstarch, schezwan pepper, cumin, hot pepper schezwan. Coat the slices well with the mixture and deep fry the slices evenly; drain well and remove on a kitchen towel.
In a shallow pan, saute the onion, mushroom, and pak choi for a while, and add all the other sauce ingredients; mix well to coat the beef and the vegetables and cook for a while.
