Plum Tomato Sauce

  Olive oil 1 Tablespoon
  Garlic 6 Clove (30 gm), chopped
  Shallots 3 , finely chopped
  Canned plum tomatoes 35 Ounce, drained and pulp squeezed dry (1 Can)
  Dried basil 1 Tablespoon
  Canned crushed tomatoes 28 Ounce (1 Can)
  Red wine 1⁄4 Cup (4 tbs)
  Basil leaves 8
  Parmesan cheese shavings 1 Tablespoon

1. Heat a large skillet over medium heat and add oil. When the oil is hot, add the garlic and shallots. Saute until garlic is golden, about 2-3 minutes.
2. Add the whole plum tomatoes and mash until the tomatoes are coarsely chopped. If you are using dried basil, add it now.
3. Mix in the crushed tomatoes and red wine. Cook until sauce simmers, approximately 5 minutes. Reduce heat to low for another 5 minutes.
4. Top each serving with fresh basil and Parmesan shavings.
