Mushroom Barbecue Sauce
|Shiitake mushrooms/Porcini / other dried mushrooms||1⁄4 Cup (4 tbs)|
|Minced onions||3⁄4 Cup (12 tbs)|
|Safflower oil||1 Teaspoon|
|Tomato sauce||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Worcestershire sauce||3 Tablespoon|
|Cider vinegar||3 Tablespoon|
|Frozen apple juice concentrate||1 Tablespoon|
|Dry mustard||2 Teaspoon|
|Water||1 Cup (16 tbs)|
Soak the mushrooms in warm water for 20 minutes.
Saute the onions in the oil for about 5 minutes in a large saucepan.
Add the tomato sauce, lemon juice, Worcestershire sauce, vinegar, apple juice, mustard, and water.
Strain the mushrooms and mash them to a paste.
Add to the pan and simmer gently for 1 hour.
