Pineapple Yogurt Sauce
|Pineapple||1 Cup (16 tbs), chopped|
|Apple juice||1⁄4 Cup (4 tbs)|
|Yogurt||1⁄4 Cup (4 tbs) (low fat)|
Place the pineapple and apple juice in a small saucepan.
Bring to a boil, then reduce heat, cover, and simmer for 10 minutes, stirring occasionally.
Place the cooled pineapple in a blender with the yogurt.
Process on low speed until smooth.
Cover and chill, if desired.
