Cod Steaks With Tarragon Mayonnaise
|Cod steaks||2 Small (Each 1/2 Inch Thick)|
|Mayonnaise||1⁄4 Cup (4 tbs)|
|Minced tarragon||3⁄4 Teaspoon|
|Dried tarragon||1⁄4 Teaspoon|
|Lemon juice||1⁄2 Teaspoon|
|Dried bread crumbs||1 Tablespoon|
1. Preheat broiler if manufacturer directs. Grease rack in broiling pan. Place cod steaks on rack; broil 5 to 7 minutes without turning, until fish flakes easily when tested with a fork.
2. Meanwhile, in small bowl, mix mayonnaise, tarragon, lemon juice, and salt.
3. When fish is done, spread mayonnaise mixture on fish; sprinkle with bread crumbs. Broil fish about 30 seconds longer or until topping is lightly browned.
