Oranges With Cranberry Coulis
|Cranberry coulis||1 Cup (16 tbs)|
|Cranberries||3 Cup (48 tbs), rinsed and sorted|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Grand marnier||6 Tablespoon|
|Water||2 Cup (32 tbs)|
|Navel oranges||6 Large|
|Sugar||3 1⁄3 Cup (53.33 tbs)|
|Water||1 Cup (16 tbs)|
|Mint leaves||1 (For Garnish)|
For coulis: Chop cranberries in processor using on/off turns or by hand.
In blender or processor blend in 1 1/2 cups sugar and Grand Marnier until smooth.
Strain through fine sieve into bowl.
Add 2 cups water. (Coulis can be prepared up to 2 weeks ahead.) Remove peel from 2 oranges using vegetable peeler.
Cut peel into julienne.
