Ingredients
  Butter 2 Tablespoon
  Carrots 1⁄4 Cup (4 tbs), finley sliced
  Celery 1⁄4 Cup (4 tbs), finley sliced
  Green bell peppers 1⁄4 Cup (4 tbs), finley sliced
  Potatoes 1⁄4 Cup (4 tbs), diced
  Onions 1⁄4 Cup (4 tbs), finley sliced
  Garlic 1 Clove (5 gm), finley sliced
  Canned tomatoes 28 Ounce
  Tarragon 1⁄4 Teaspoon
  Oregano 1⁄4 Teaspoon
  Thyme 1⁄4 Teaspoon
  Parsley 2 Teaspoon, chopped
  Salt and pepper 1
Directions

–  In a saucepan, melt butter and saute vegetables and garlic without browning . Add tomatoes and fines herbes, and season with salt and pepper. Bring mixture to a boil, then simmer for 20 minutes.
–  Run mixture through blender. Return to saucepan and cook for 5 minutes.
–  Adjust seasoning, then pour through sieve and serve.
