Microwaved Lemon Sauce
|Sugar||3⁄4 Cup (12 tbs)|
|Hot water||3⁄4 Cup (12 tbs)|
|Lemon juice||3 Tablespoon|
1. Combine cornstarch and sugar in a 1 -quart glass measuring pitcher; add water and mix well. Cook uncovered in microwave oven 2 minutes at High; stir frequently.
2. Beat egg yolks and add a small amount of hot mixture to egg yolks, then blend into mixture in measuring pitcher. Cook uncovered in microwave oven 1 minute at High, or until thickened.
3. Remove from oven. Add butter, lemon juice and salt to sauce; beat until blended.
