Spicy Parsley Sauce
|Minced onions||1⁄2 Cup (8 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Ground black pepper||1 Teaspoon|
|Cayenne pepper||1⁄4 Teaspoon|
|Red wine vinegar||1⁄3 Cup (5.33 tbs)|
|Tomatoes||2 Medium, peeled, seeded, and pureed|
|Very finely minced fresh parsley||1⁄4 Cup (4 tbs)|
Place the minced onions in a bowl.
Sprinkle on salt, black pepper, cayenne, marjoram, and oregano.
Stir, then cover with vinegar.
Let stand 1 to 2 hours at room temperature to meld flavors.
After mixture has stood 1 to 2 hours, drain and discard the vinegar.
Add pureed tomatoes and parsley to the minced onions.
