Caramel Pecan Dessert Sauce
|Packed brown sugar||1 Cup (16 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Light cream||3⁄4 Cup (12 tbs)|
|Light corn syrup||1⁄4 Cup (4 tbs)|
|Coarsely chopped pecans||1⁄2 Cup (8 tbs)|
In heavy saucepan combine brown sugar, cornstarch, and salt; stir in water.
Stir in light cream and corn syrup.
Cook, stirring constantly, till thickened and bubbly. (Mixture may appear curdled during cooking.)
Stir in pecans, butter, and rum.
Use as a topping for cakes and ice creams.
