Cucumber In Minty Sauce
|Firm cucumbers||2 , peeled|
|Plain yogurt||1⁄2 Cup (8 tbs)|
|Fresh chives||2 Tablespoon, finely chopped|
|Fresh mint||2 Tablespoon, finely chopped|
|Green cabbage leaves||4|
Slice cucumbers in half lengthwise.
Cut into thin slices.
In a bowl, mix yogurt, chives and mint.
Gently fold in cucumber slices.
Refrigerate at least 30 minutes.
Cover 4 salad plates with a green cabbage leaf.
Spoon cucumber mixture into the middle.
