Green Pea Catsup Sauce For Deep Fried Peking Chicken

Ingredients
  Green peas 1 Cup (16 tbs)
  Oil 2 Tablespoon
  Catsup 1⁄4 Cup (4 tbs)
  Stock 3⁄4 Cup (12 tbs)
  Sherry 2 Tablespoon
  Sugar 1 Teaspoon
  Salt 1⁄2 Teaspoon
Directions

1. Shell green peas.
2. Heat oil. Add peas; stir-fry 1 minute. Then stir in catsup, sherry, sugar and salt.
3. Add stock and heat quickly.
4. Add deep-fried chicken pieces. Simmer, covered, to heat through; then serve.
