Veal Patties In White Wine Sauce

  Ground veal 2 Pound
  Egg 1
  Onion 2 Tablespoon, chopped
  Capers 2 Tablespoon, chopped
  Parsley 1 Tablespoon, chopped
  Worcestershire sauce 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Pinch
  Sage 1⁄2 Teaspoon
  Olive oil 2 Teaspoon
  Butter 2 Teaspoon
  Mushrooms 1 Cup (16 tbs), quartered
  Shallots 2 Tablespoon, chopped
  Dry white wine 2 Tablespoon

In a bowl, mix first 9 ingredients.
With dampened hands, shape into 8 patties.
Set aside.
In a skillet, heat oil and melt butter.
Lightly brown patties.
Remove from skillet.
Set aside.
In veal cooking fat, lightly cook mushroom quarters and shallots.
Deglaze with white wine.
Bring to a boil.
Reduce heat.
Place veal patties in skillet.
Simmer 2-3 minutes.
