Camarones Al Ajillo

JuanMontalvo's picture
Camarones a la Criollo is a tasty mix of shrimp and sweet tomato sofrito sauce served over rice. It is a quick and fail safe recipe. One of the things I like about typical Cuban foods like this recipe is that you don’t have to use a lot of seasonings or spices, because every thing is simple and made with ingredients that grow naturally.
Ingredients
Shrimp 1 Pound, shelled and deveined
Olive oil 1⁄4 Cup (4 tbs)
  Butter 1 Tablespoon
  Garlic 4 Tablespoon, minced
Vino seco/Dry white wine 1⁄4 Cup (4 tbs)
Dry white wine 1⁄4 Cup (4 tbs) (Vino Seco)
  Lime 1 , juiced
  Oregano 1⁄4 Teaspoon
  Cumin 1 Pinch
  Hot sauce 1 Dash
  Salt To Taste
Parsley 1⁄4 Cup (4 tbs), finely chopped
Directions

In a large pan, heat the olive oil over medium heat until fragrant add the butter and garlic, saute about 1 to 2 minutes.

Add the vino seco, lime juice, oregano, cumin, salt and hot sauce. Simmer for another 2 to 3 minutes. Add the shrimp and cook, stirring until the shrimp turn pink, about 3 to 5 minutes.

Turn off the heat, add the parsley and mix it in well. Using tongs remove the shrimp from the pan. Place over a serving of brown rice. Pour the sauce over the shrimp.
