Chicken Satay With Thai Peanut Sauce

Chicken satay with Thai peanut sauce, very easy.
Ingredients
  Peanut butter 1⁄2 Cup (8 tbs) (Valencia)
  Sesame oil 1 Tablespoon
  Fish sauce 1 Tablespoon
  Fresh pineapple juice 1⁄4 Cup (4 tbs)
  Fresh cilantro 1 Tablespoon
  Coconut milk 1 Cup (16 tbs)
  Sriracha 1 Tablespoon
Directions

Put some extra virgin olive oil over chicken thigh pieces, then we are going to use Harvest eating poultry spice, use it liberally in seasoning the chicken.

Place the chicken over a preheated grill and while chicken satay is being grilled we will see how to make Thai peanut sauce.

Take half a cup of Valencia peanut butter in a bowl. Add some sesame oil, fish sauce, some fresh pineapple juice, and cilantro and mix these in.

Add some coconut milk to the mixture and mix well.

Add some sriracha for some heat in the peanut sauce.

Grill the chicken on both sides until they are firm enough and have good grill marks on them.

Shift them to the chopping board area and cut them into small pieces.

Serve chicken satay with rice and black beans. Serve peanut sauce in a small container along with the rice, beans and chicken satay.
