Tomato Puree Sauce

  Hambone 1
  Tomato sauce 1 Can (10 oz)
  Onion 1 Small, chopped very fine
  Canned tomatoes 11 Ounce (No 1 Can)
  Stalk celery 1 , chopped very fine
  Bay leaf 1
  Carrot 1 , chopped very fine
  Whole parsley 3 Tablespoon
  Butter 4 Tablespoon
  Flour 1 Tablespoon
  Sugar 1 1⁄2 Teaspoon
  Thyme 1 Pinch
  Whole allspice 6
  Cloves 6
  Tabasco sauce 1 Dash

Place a hambone in a small pan with the chopped onion, celery, carrot, and parsley leaves.
Saute with 4 tablespoons butter until the onion is limp and golden, and stir in a bit of flour (about 1 tablespoon); add the tomato sauce and tomatoes.
Drop in the bay leaf, thyme, allspice, cloves, a dash of Tabasco Sauce, and sugar.
Simmer for 30 to 40 minutes.
Strain before serving.
