Tomato Puree Sauce
|Tomato sauce||1 Can (10 oz)|
|Onion||1 Small, chopped very fine|
|Canned tomatoes||11 Ounce (No 1 Can)|
|Stalk celery||1 , chopped very fine|
|Carrot||1 , chopped very fine|
|Whole parsley||3 Tablespoon|
|Sugar||1 1⁄2 Teaspoon|
|Tabasco sauce||1 Dash|
Place a hambone in a small pan with the chopped onion, celery, carrot, and parsley leaves.
Saute with 4 tablespoons butter until the onion is limp and golden, and stir in a bit of flour (about 1 tablespoon); add the tomato sauce and tomatoes.
Drop in the bay leaf, thyme, allspice, cloves, a dash of Tabasco Sauce, and sugar.
Simmer for 30 to 40 minutes.
Strain before serving.
