Tomato Sauce Bologna-Style
|Ripe plum tomatoes/Overripe regular tomatoes||3 Pound|
|Olive oil||1⁄2 Cup (8 tbs)|
|Carrots||2 , finely chopped|
|Celery stalks||2 , finely chopped|
|Onion||1 Medium, finely chopped|
|Fresh basil||1⁄2 Cup (8 tbs) (Loosely Packed)|
|Parsley||1⁄2 Cup (8 tbs) (Loosely Packed)|
|Freshly ground pepper||To Taste|
Cut tomatoes into large pieces.
Heat oil in a large saucepan.
Add tomatoes, carrots, celery, onion, basil, parsley and salt and pepper.
Bring to a boil.
Reduce heat to medium.
Cook uncovered 30 to 40 minutes or until sauce reaches a medium-thick consistency.
Taste and adjust for seasoning.
Press everything through a food mill and back into saucepan.
Cook 20 to 30 minutes longer.
