Chicken In Sesame Sauce
|Boneless chicken breast||450 Gram|
|Sunflower oil||1 Tablespoon|
|Unsalted cashew nuts||100 Gram|
|Canned straw mushrooms||75 Gram, drained and halved|
|Spring onions||3 , chopped|
|Light soy sauce||3 Tablespoon|
|Hot pepper||2 Tablespoon|
|Sesame oil||2 Tablespoon|
|Sesame seed paste||1 Tablespoon (Tahini)|
|Ground szechuan peppercorns||1 Teaspoon|
Cut the chicken into cubes.
Put all the marinade ingredients into a bowl and add the chicken, turning to coat the pieces thoroughly.
Leave to marinate for 30 minutes.
Meanwhile, heat the oil in a wok or frying pan.
Add the cashew nuts and fry them until golden.
Drain on absorbent kitchen paper.
Add the chicken and marinade to the wok and stir-fry for 2 minutes.
Add the mushrooms and cook for a further minute.
Pile the mixture into a warmed serving dish and sprinkle with the nuts.
