|Chopped tomatoes||24 Medium, peeled and chopped|
|Chopped onion||3 Cup (48 tbs)|
|Chopped celery||2 Cup (32 tbs)|
|Chopped green pepper||1 1⁄2 Cup (24 tbs)|
|Bottled lemon juice/1 1/2 teaspoons citric acid||1 Cup (16 tbs)|
Combine first 5 ingredients in a large kettle.
Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes, stirring frequently.
Remove from heat; put tomato mixture through a sieve, reserving tomato juice.
Bring juice to a boil; reduce heat, and simmer, uncovered, 2 hours, stirring frequently.
Blend will then add lemon juice; stir well.
