  Lambs kidneys 8
  Butter 2 Ounce
  Water/Stock 1⁄4 Cup (4 tbs)
  Chopped onion 1 Cup (16 tbs)
  Flour 1 Ounce
  Seasoning 1 Tablespoon
  Port wine 1⁄4 Pint
  Mixed herbs 1 Pinch
Directions

Cut each kidney into 4, removing gristle.
Toss in the seasoned flour.
Fry gently with the onion in the butter for 5 minutes.
Add stock, port wine, herbs, seasoning.
Bring to boil and cook until thickened.
Simmer for further 5 minutes.
