Maple Baked Fresh Ham With Raisin Sauce
|Pork leg||7 Pound (Fresh Ham)|
|Maple syrup||1 Cup (16 tbs)|
|Ground ginger||1⁄2 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Ground allspice||1⁄4 Teaspoon|
|Raisin sauce||1 Tablespoon|
Score fat on ham in a diamond design, and stud with cloves.
Place ham, fat side up, on a rack in a roasting pan.
Insert meat thermometer, making sure it does not touch fat or bone.
Combine syrup, ginger, nutmeg, and allspice; stir well, and pour over ham.
Bake, uncovered, at 325° for 2 to 3 hours or until meat thermometer registers 160° (25 to 30 minutes per pound).
Baste ham with drippings every 20 to 30 minutes.
If ham browns too quickly, cover loosely with foil.
