Ingredients
  Butter 1⁄4 Cup (4 tbs)
  Imported mustard 2 Teaspoon (Preferably Dijon)
  Lemon 1 , juiced
  Freshly ground black pepper To Taste
  Nutmeg 1⁄4 Teaspoon
  Chopped parsley 2 Teaspoon
  Chopped chives 1 Teaspoon
  Egg yolks 4
  Salt To Taste
Directions

1. In a saucepan, combine the butter, mustard, lemon juice, seasonings and herbs. Place the saucepan in a skillet containing simmering water (or use a double boiler) and stir with a wire whisk until the butter has melted.
2. Beat the egg yolks until thick and lemon-colored and stir them into the butter-mustard mixture. Continue beating vigorously over barely simmering water until the sauce thickens
