Blintzes With Fresh Peach Sauce
|Low fat cottage cheese||1 Cup (16 tbs)|
|Neufchatel||3 Ounce (Otherwise Called Light Cream Cheese, 1 Package)|
|Vanilla extract||1⁄2 Teaspoon|
|Flour tortillas||4 (Each 8 Inches In Diameter)|
|California peach||1 , sliced (Use Fresh)|
|Peach sauce||1 Tablespoon (Use Fresh)|
Beat cheeses and vanilla in small bowl until well blended.
Heat lighdy oiled 10-inch nonstick skillet.
Briefly heat 1 tortilla over medium heat just until soft, turning once.
Remove tortilla and spoon 1/4 of cheese mixture in center.
Top with 1/4 of peach slices.
Fold 2 sides in, partially covering filling.
Roll up to enclose filling and make rectangular package.
Repeat with remaining filling and tortillas.
Add small amount of oil, as needed, to skillet.
Heat filled tortillas over medium-low heat until browned.
