Whole Grain Mustard Sauce

Ingredients
  Chopped tarragon 1 Teaspoon
  Diced shallots 2 Teaspoon
  White wine 4 Ounce
  Heavy cream 12 Ounce
  Whole grain mustard 1 Ounce, prepared
  Salt To Taste
  Pepper To Taste
Directions

Sweat shallots in a 2 quart stockpot.
Add wine and reduce to approximately 1 ounce liquid.
Add heavy cream and reduce until nappe (coats spoon and is slightly thickened).
Add mustard, tarragon, salt and pepper.
