Whole Grain Mustard Sauce
|Chopped tarragon||1 Teaspoon|
|Diced shallots||2 Teaspoon|
|White wine||4 Ounce|
|Heavy cream||12 Ounce|
|Whole grain mustard||1 Ounce, prepared|
Sweat shallots in a 2 quart stockpot.
Add wine and reduce to approximately 1 ounce liquid.
Add heavy cream and reduce until nappe (coats spoon and is slightly thickened).
Add mustard, tarragon, salt and pepper.
