Au Gratin Sauce For Fish

This Au Gratin Sauce for fish is amazingly tempting ! It's so versatile ! It goes well with my fish fries and bakes particularly well ! Just try this Au Gratin Sauce and let me know if you like it !
Ingredients
  Oil 2 Tablespoon
  Barley flour 4 Tablespoon
  Chicken stock 1 1⁄3 Cup (21.33 tbs)
  Tomato juice 4 Tablespoon
  Tamari soy sauce 1 Teaspoon
  Cheddar cheese 3⁄4 Cup (12 tbs), grated
  Skim milk powder 3 Tablespoon
  Water 1⁄3 Cup (5.33 tbs)
  Chopped parsley 1 Tablespoon
Directions

In the top of a double boiler, heat oil and gradually stir in barley flour.
Heat stock and add it to oil and flour, a little at a time, blending until smooth.
Stir in tomato juice and tamari soy sauce.
Add grated cheese gradually, stirring constantly to blend it in.
Combine skim milk powder and water with a wire whisk and add to sauce, mixing until smooth.
Add chopped parsley.
Spoon some sauce over broiled fish just before serving and broil for 3 minutes or until it is golden brown.
