Au Gratin Sauce For Fish
|Barley flour||4 Tablespoon|
|Chicken stock||1 1⁄3 Cup (21.33 tbs)|
|Tomato juice||4 Tablespoon|
|Tamari soy sauce||1 Teaspoon|
|Cheddar cheese||3⁄4 Cup (12 tbs), grated|
|Skim milk powder||3 Tablespoon|
|Water||1⁄3 Cup (5.33 tbs)|
|Chopped parsley||1 Tablespoon|
In the top of a double boiler, heat oil and gradually stir in barley flour.
Heat stock and add it to oil and flour, a little at a time, blending until smooth.
Stir in tomato juice and tamari soy sauce.
Add grated cheese gradually, stirring constantly to blend it in.
Combine skim milk powder and water with a wire whisk and add to sauce, mixing until smooth.
Add chopped parsley.
Spoon some sauce over broiled fish just before serving and broil for 3 minutes or until it is golden brown.
