Melon Balls In Lemon Sauce
|Ripe melon/Honeydew / cantaloupe||2 Cup (32 tbs)|
1. The melon must be absolutely ripe for this dessert. Halve it and remove the seeds. Using a melon bailer, make as many melon balls as possible. Chill them thoroughly while making the sauce.
2. Grate the rind of the lemons into a small pan. Squeeze the juice from the 2 lemons and measure it, adding enough water to make 2/3 cup. Add this to the rind, with sugar and remaining melon pieces that have not been balled. Bring to boil and allow to simmer for 5 minutes.
3. Blend this mixture, chill it, and put it in the bottom of a glass dish. Top it with melon balls, a sprig of mint, and a lemon slice.
