|All purpose flour||1 Cup (16 tbs)|
|Chicken broth||2 Cup (32 tbs)|
|Milk||2 Cup (32 tbs)|
|Cheddar cheese||1⁄4 Pound, grated|
Melt butter in a large saucepan; add flour, stirring constantly.
Add chicken broth and then hot milk, stirring constantly.
Add cheese and salt.
Bring sauce to a boil, then reduce heat and cook slowly for 20 minutes, stirring constantly.
Cool to lukewarm.
Beat with a wire whisk until smooth before using to make Devonshire Sandwiches.
