|Olive oil||1 Tablespoon|
|Finely chopped onion||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Canned italian style peeled tomatoes||16 Ounce (1 can)|
|Tomato paste||3 Tablespoon|
|Crumbled dried oregano||1 Teaspoon|
|Freshly ground black pepper||1⁄8 Teaspoon|
Heat oil in medium saucepan.
Add onion and garlic; saute over medium heat 5 minutes, stirring constantly.
Do not brown.
Puree tomatoes and their juice in blender or food processor, or break up with fork.
Add tomatoes, tomato paste, and seasonings to saucepan.
Bring to boil; reduce heat to low.
Cook, uncovered, stirring occasionally, 50 minutes or until thick.
Set aside to cool.
