Lamb In Paprika Sauce With Thimble Dumplings

  Forequarter lamb 2 1⁄2 Pound
  Salt 1 Teaspoon
  Flour 1 Teaspoon
  Lard 2 Ounce
  Onions 3 1⁄2 Ounce
  Paprika 1⁄2 Teaspoon
  Lecso 3 1⁄2 Ounce
  Sour cream 3⁄4 Pint
  Thimble dumplings 5 (5 Portions)

Fry the finely chopped onions in lard until they turn yellow, add red paprika.
Cut the meat into large cubes, and fry lightly with onions; add a little water and salt, and let it simmer till tender, then mix in the lecso.
Mix the sour cream with flour and stir it into the paprika sauce; boil well.
