Hot Dogs In Soubise Sauce
|Onions||4 Small, sliced|
|Minced onion||3⁄4 Cup (12 tbs)|
|Monosodium glutamate||1⁄4 Teaspoon|
|Pepper||To Taste (Few Grains Are Required)|
|Chicken broth||1 Cup (16 tbs)|
|Cream||1⁄4 Cup (4 tbs)|
|Hard-cooked eggs||4 , sliced|
|Frankfurters||4 , cut in 0.5 inch pieces|
|Potatoes||4 Medium, cooked, peeled, and thinly sliced|
Heat 2 tablespoons butter in a skillet.
Add onion and cook until onion is transparent.
Arrange onions in a greased 8-inch square baking dish.
For sauce, heat the 3 tablespoons butter in skillet.
Add minced onion and cook until onion is transparent.
Blend in a mixture of the flour, salt, mono-sodium glutamate, oregano, and pepper.
Add chicken broth and honey gradually, stirring constantly.
Heat until mixture bubbles and continue to cook for 5 minutes, stirring constantly.
Remove sauce from heat.
Add the remaining butter and the cream, stirring until mixture is blended.
Arrange layers of eggs, frankfurters, and half the potatoes over the onion slices.
Pour some of the sauce evenly over mixture.
Repeat with remaining potatoes and sauce.
Bake at 350Â°F about 20 minutes.
Remove from oven.
Sprinkle with paprika.
Put baking dish on broiler rack about 4 inches from source of heat.
Broil about 2 minutes, or until top is lightly browned.
