Pork Chops In Dill And Paprika Sauce
|Pork chops||1 3⁄4 Pound|
|Lard||3 1⁄2 Ounce|
|Onions||3 1⁄2 Ounce|
|Sour cream||1 Cup (16 tbs) (2 Gills)|
Cut 10 chops from loin, salt and dip them into flour.
Fry lightly in hot lard and place them into a casserole.
Fry the chopped onions in the same lard till golden yellow.
Add the paprika, 1 gill of water and allow to boil for some mins.
Pour this sauce over the chops, and allow to simmer under lid.
When nearly tender, add the mixed sour cream and flour with the chopped fresh dill, previously fried in butter.
Add cream just before serving and bring it to boil once more.
Garnish it with gnocchi (thimble dumplings).
