Sardine Sandwiches

Ingredients
  Sardines 12 Large
  Hard cooked eggs 1
  Pepper To Taste
  Lemonjuice 1 Tablespoon
  Shrimp butter 1 Tablespoon
  Mayonnaise/Little worcestershire sauce 1⁄4 Cup (4 tbs)
  Salt To Taste
  Creamed butter 1 Tablespoon
Directions

GETTING READY
1.Start by draining the oil from the fish and remove the skins

MAKING
2.In a bowl, pound the fish to a paste with salt, pepper, and lemon juice
3.Between thin slices of buttered bread spread the fish mixture

SERVING
4.Serve with a sauce of your choice

TIPS
Shrimp butter may be mixed with the sardine paste and the flavor may be varied by the addition of worcestershire sauce or mayonnaise or both. The mashed yolk of the hard cooked egg and three parts of creamed butter to one of the sardine mixture makes a delicious sandwich filling
