Po' Boys

Po's boys or poor boys are heavy and filling seafood sandwiches made with shucked oysters fried with a coating of eggs and seasoned flour. The po boys are served between bread loaves with mayo, salad dressing and hot pepper sauce. Served with lemon wedges, the po' boys are delicious sandwiches
  Shucked oysters 1 Pint
  Eggs 2
  Corn flour/All purpose flour 3⁄4 Cup (12 tbs)
  Salt 1⁄2 Teaspoon
  Ground black pepper 1⁄4 Teaspoon
  Shortening/Cooking oil 2 Cup (32 tbs) (For Deep Frying)
  7 inch french bread loaf 2 , sliced horizontally
  Butter/Margarine 2 Tablespoon, softened
  Mayonnaise/Salad dressing 2 Tablespoon
  Bottled hot pepper sauce 1 Tablespoon
  Lemon wedges 4

Drain oysters.
Pat dry with paper towels.
In a small mixing bowl beat eggs.
In another mixing bowl combine flour, salt, and pepper.
Dip oysters into beaten eggs, then coat with flour mixture.
In a saucepan or deep fat fryer heat 2 inches shortening or oil to 375°.
Fry oysters, a few at a time, in hot oil for 1 to 1 1/2 minutes or till golden.
Drain on paper towels.
Keep warm in a 325° oven while frying remaining oysters.
Spread the cut side of each loaf bottom with butter or margarine.
Heat in a 325° oven about 5 minutes till warm.
Spread the cut side of each loaf top with mayonnaise or salad dressing.
Heap fried oysters onto bottoms of the loaves.
Sprinkle oysters with hot pepper sauce.
Add loaf tops.
Serve sandwiches warm with lemon wedges.
